What is up with cooks almost always being among the more sensible people on the crew? Does not matter what tech level your work is. It is true that cooking gives you some time to think similarly to bartender advice :D
I guess it is customary as you explained before but in this case why not just make up a completely new name? This still kind of puts you in a group of sorts that usually attracts wrong attention. Hm.

That's true, and I'm sure plenty of people do choose a different name. The name does have its benefits though. If someone committed a crime then changed their name to Bob Smith, they could still be arrested, whilst if they used Davy Jones they couldn't be. (for past crimes at least.) I'm sure in a lot of cases the name is taken by criminals right before getting caught as a last ditch effort. Of course there are some crimes that are exempt from this.
I also don't see this as a practice that will survive that much longer, as the legal system becomes more refined.
Criminality also isn't the only reason someone could take the name, too. If they're trying to escape being found by someone for whatever reason, it makes a person impossible to trace. That's why Joneses always get a bit of a benefit of the doubt, even where there's suspicion.
Ah, I did not think of the tracing part and in your setting that makes a whole lot of sense. You can go by a name and I guess appearance. Appearance is something people often just forget: "I do not know. Many people like that come to this town. Maybe he was here."
And if you keep introducing yourself as a Jones then that is not going to help anyone in any way twice as much.
